Cheesecake au café

August 2, 2024 BODi

Ingrédients

  • Papier aluminium
  • Huile de cuisson en aérosol
  • 100 g / 3½ oz. de petits beurres (ou 8 plaques de biscuits graham), écrasés
  • 2 c. à soupe. de beurre doux (bio, de pâturage, si possible), fondu
  • 230 g / 8 oz. de fromage frais allégé, ramolli
  • 2 mesures de Shakeology au café latte
  • 3 gros œufs
  • 35 g / ¼ de tasse de sucre de coco pur
  • 60 g / ¼ de tasse de fromage blanc (ou yaourt à la grecque nature allégé (2 %))
  • 1 c. à café d’extrait de vanille pur
  • 2 c. à soupe. de copeaux de chocolat noir

Instructions

  1. Préchauffez le four à 180 °C (350 °F). Enveloppez plusieurs fois l’extérieur d’un moule à charnière de 20 cm (8 po) de papier aluminium pour couvrir toutes les fentes. Vaporiser légèrement l’intérieur du moule d’huile.
  2. Mettez les petits beurres et le beurre dans un robot culinaire; couvrez. Mélangez à puissance élevée jusqu’à ce que le tout soit combiné. Pressez le mélange de petit beurre au fond du moule.
  3. Faites cuire au four pendant 10 minutes. Retirez du four. Baissez le four à 165 °C (325 °F).
  4. Pendant que la base cuit, mettez le fromage frais, le Shakeology, les œufs, le sucre de coco, le fromage blanc et l’extrait dans un saladier moyen; fouettez jusqu’à une consistance homogène.
  5. Étalez le mélange de fromage sur la base. Placez le moule à l’intérieur d’un plat à rôtir; versez 2,5 cm (1 po) d’eau chaude dans le plat. Mettez au four.
  6. Laissez cuire au four pendant 45 à 50 minutes, ou jusqu’à ce que le cheesecake soit pris partout sauf au milieu (une petite secousse de la casserole devrait entraîner une légère oscillation au milieu du cheesecake).
  7. Retirez le plat du four. Laissez refroidir complètement le cheesecake dans le plat. Couvrez le moule à charnière de papier aluminium. Réfrigérez pendant au moins 6 heures.
  8. Garnissez de copeaux de chocolat. Coupez en 8 égales. Réfrigérez les restes dans un récipient hermétique jusqu’à 3 jours ou congelez jusqu’à 1 mois.
